The colored carrots have similar flavour and texture to the standard orange carrot and can be used in exactly the same way. They can be a great addition to add colour and crunch to appetisers, salads, and entrees.
Each colour also has a different nutritional content. Orange - beta and alpha carotene (vitamin A). Purple - anthocyanin, beta and alpha carotene. Red - lycopene and beta carotene. Yellow - xanthophylis and lutein. White - fibre which aids healthy digestion.
Rainbow carrots are also known as heirloom carrots. They are best enjoyed roasted.
