Cipollini onions are small, flat-shaped spheres. Popular in Italy, they have a well developed flavor that's a little sweet. Traditionally served whole in Italian sweet and sour sauce, they are also good marinated and pickled.
These onions taste similar to shallots, but they are also very sweet, making them well suited to braising and roasting. Try caramelizing them in butter and tangy-sweet balsamic vinegar.
